Hi, folks!
Today I made pickled beets, an old family favorite. I picked about a dozen beets and it made one quart and one half-pint. The recipe is from The Victory Garden Cookbook by Marian Morash and it's easy to make because no processing is required. These jars will keep in the refrigerator for a week or two. The beet greens are also delicious, sauteed or lightly steamed.
Debbie, I enjoyed your pictures of the flora and fawn, I'm suprised you were able to get so close to the bunnie and birds. I hope your garden continues to provide you with lots of produce as you seem to know what to do with it. Fran in Ohio
ReplyDeleteIt is surprising how much variety there is in your small back yard...and as well how much you are able to accomplish in your very tiny kitchen! You don't have to have a lot of space to still get a lot of use and enjoyment from it...Jean
